They used to do it that way: they used to offer a discounted fare and give you a listing of alternative dates you could arrive and alternative dates you could depart to get that fare; and most available flights were not on weekends. Then you could "build-your-own" itinerary from those dates, for one week, for two weeks, or for any longer combination that was available within the date structure.
